New England Clam Chowder Ramen Has Come to Santa Cruz

The east coast meets the far east and it is happening in downtown Santa Cruz.

Full Steam Dumpling is known for handmade ramen and dumplings out of their spot inside 11th Hour Coffee at After Hours SC. They do tonkotsu, shio, rotating specials, and they do them well.

But this one is different.

New England Clam Chowder X Ramen

One bowl. One day. 45 servings.

They built a house made broth that fuses New England clam chowder with tonkotsu. Rich, creamy, deep, and unlike anything else you will find in Santa Cruz right now.

On top of that broth they stacked steamed clams, crispy potatoes, bacon fat, bacon, oyster chips, chives, and a tare egg.

Every ingredient belongs there. The smokiness of the bacon against the brininess of the clams in a tonkotsu chowder base is the kind of combination that sounds wild on paper and makes complete sense in the bowl.

This is a one time thing. 45 bowls only. Once they are gone they are gone.
